Ciao, I’m Davide - a chef, gastronome and wine expert born and raised in the Eternal City. Amounts indicated are for one person.
For the pasta:
2 Fresh organic eggs (medium size would be fantastico)
200 g (2/3 cups) of "00 flour" / all-purpose flour is ok. NO self-rising flour
For the tomato sauce:
1 tin of plain chopped tomatoes (Italian would be lovely)
2 spoons of olive oil
Salt and pepper (to taste)
1 clove of garlic
Basil leaves (to taste)
Parmesan (to taste)
For the ravioli filling:
1 teaspoon of sugar
Fresh lemon zest
2 and ½ spoons of Ricotta cheese or any soft cheese
1 spoon of oil
Pepper to taste
1 spoon of Parmesan cheese
For the butter and sage sauce:
2 spoons of butter
Sage (to taste)
